Recipes - Breakfast

  • 1 bagel, any flour
  • 2 teaspoons raisins
  • 2 teaspoons chopped walnuts
  • 2 tablespoons plain cream cheese
  • ½ teaspoon (or to taste) ground cinnamon

  • Directions
    Cut the bagel in half and place in toaster. While the bagel is toasting, chop the raisins. Mix together the raisins, walnuts, and cream cheese. Stir in the ground cinnamon. Spread the bream cheese mixture on the toasted bagel.

  • 2 eggs
  • 2 tablespoons milk
  • Salt and pepper, to taste
  • Paprika, to taste
  • 2 tablespoons butter or margarine

  • Directions
    1. Break the eggs into a small bowl. Add the milk, salt and pepper, and paprika. Beat the eggs until they are an even color throughout.
    2. In a small skillet, melt the butter or margarine over low heat. Increase heat to medium-low and add the eggs.
    3. Cook the eggs, using a spatula to turn sections of the egg from time to time so that the uncooked egg on top flows underneath. Adjust the heat up or down as needed. For best results, remove the scrambled eggs from the pan when they are firm but still a bit moist (about 6 to 8 minutes).

  • 2 eggs
  • Salt, to taste
  • ¼ cup milk
  • 2 tablespoons butter or margarine
  • 2 slices bread
  • ½ teaspoon sugar, optional
  • ¼ teaspoon cinnamon, optional

  • Directions
    1. In a small bowl, lightly beat the eggs. Add the salt and milk.
    2. Heat the butter or margarine in a frying pan over medium-low heat.
    3. Take a slice of bread and dip one side into the beaten egg, letting it sit for a few second to soak up the egg mixture. Turn the bread over and repeat with the other side. Lay the bread flat in the frying pan. Repeat with the other slice of bread.
    4. Cook until the bread is browned on the bottom, then turn over and repeat with the other side. Remove from the frying pan and sprinkle with sugar and/ or cinnamon, if using. Sever with syrup.

  • 1 basic poached egg
  • 1 English muffin
  • 1 tablespoon (or to taste) butter or margarine
  • 2 tablespoons plain yogurt
  • 1 teaspoon prepared mustard

  • Directions
    Split the English muffin in half, toast, and butter both halves. Mix together the yogurt and mustard. Spread the yogurt and mustard mixture on 1 muffin half, and place the poached egg on the other half.

  • 1 egg separated
  • ¼ melted butter
  • ¾ cup, plus 2 tablespoons milk
  • 1 ½ teaspoons baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 cup all –purpose flour

  • Directions
    1. Preheat waffle iron. In a small bowl, use an electric mixer to beat the egg while until stiff. In another bowl, beat the egg yolk well and mix in the melted butter and milk.
    2. In a medium-sized bowl, stir the baking powder, salt, sugar, and cinnamon into the flour, blending thoroughly.
    3. Make a “well” in the middle of the flour mixture. Pour the beaten egg mixture into the well and stir into the dry ingredients. The batter should resemble a muffin batter. Gently fold in the egg white.
    4. Cook the waffle according to the instructions on the waffle iron. Serve topped with sugar, fresh fruit, or syrup.
